I'm not aware of any plans to make the side wings in carbon, although the boot spoiler is carbon.
The car shown has the suspension kit fitted, which comprises two front springs and two adjustable rods for the rear ride height sensors. Standard procedure is to lower the rear the same amount as the front. You could probably go lower, as far as the thread on the rod allows, but you may not see any handling benefit from this. It's not always the case that lower = better. I agree that in these photos the rear doesn't look much lower than stock, but I'm assured it actually is 20-25mm lower, same as the front.
