The Mustang(s) weren't stock though, the 390's had been hopped-up a little so as to be able to keep up with the stock 440 Charger's during the filming.
There's also a link between Bullitt and the French Connection car chase, as Bill Hickman who drove the Charger for Bullitt, was also the stunt driver for the French Connection chase.
Hickman was a great friend of James Dean, and had been Dean's performance driving tutor, and Hickman was driving the Ford Country Squire wagon with car trailer following Dean when Dean fatally crashed on their way to Salinas, and it was Hickman who pulled the dying Dean from the wreck.
