You're screwed since iTunes 11.1 is needed for iOS 7. You'll be iTunesless until Monday or Tuesday whenever Apple will update iTunes to 11.1 ahead of Wednesday's iOS 7 public release.

Unless you use a Mac. You can find the beta on the internet.
