I think low 300s to 400 is plenty for me. Anything more and it'll be too easy to be reckless and the fun of accelerating ends too quickly.
What matters more to me is the sensation of speed. Unfortunately modern cars are so NVH-obsessed that the sensation of speed has diminished.
