Apparently, it’s 20$ a month from ATT to use eSIM, if all it does is give me YouTube then I don’t need it. I do have the entertainment pkg for another year, what does that get me without eSIM?

Yes, the eSIM has always been an extra cost. It allows YouTube access. It also turns the car into a WiFi hotspot and allows making and receiving calls without your phone in the car. The entertainment package allows access to the Air Console games and the TiVo video streaming app.

The eSIM adds a line (your car) to your primary mobile service - right now, AT&T, T-Mobile or Verizon - and acts as a repeater for your mobile phone, data and voice (using your mobile number). You can place and receive calls through your car (the eSIM) without having your phone with you and it works through your car's antenna, improving reception and transmission. The data line allows the WiFi connection of up to 10 separate devices (tablets, other phones, laptops) through the eSIM as a mobile hotspot. If you have OS 8.5, as above, it also permits streaming services like YT as a native app (not with OS 8.0 however). Much of which is explained in your owner's manual and several threads on the forum. Whether it's worth the additional cost depends on your individual use-case. The eSIM is independent of the car's built-in SIM that connects to BMW's servers and allows ConnectedDrive services and the MyBMW app to work.
