tonight the dog and I had saute'd chicken breast with tortellini (store bought pasta, I thought I had some frozen homemade still...but nope) kalamata olives, capers and cherry tomatoes in a white wine and chicken stock reduction topped with shredded Asiago and fresh basil.

I bought some thick cut prosciutto that I would have diced up and thrown it in there too... but I forgot I bought it

Had some friends over for movie night and made Creamy Tuscan Chicken with Lemon Roasted Potatoes and Buttered Rolls.

Yep, so after my chicken and bread both went in the garbage Saturday night, I ordered pizza from a local coal fired place. It was really good. They called it Piccante - tomato sauce, mozz, ground sausage, gorgonzola, pecorino and red pepper flakes. I wasn't sure about the gorgonzola on pizza at first but it worked. And it was cooked to perfection, nice and crisp the way I like it.

Sadly my contributions will be few and far between. I’ve decided it’s time to knock off a few Lbs.

I was able to loose 30 lbs and still eat. I simply used the MyPlate app to help me track what I was easing and the weight came off pretty easily.

I made a Chicken Korma tonight too. It's not as pretty as yours...

Saute'd chicken breast, basmati rice, I have to admit, I did cheat and use a korma season pack from the local Indian market

I’m so glad I cooked like a fiend yesterday to make it easier this week. I forgot to take my lentil soup to work for lunch. And I didn’t get home until almost 8:00. Too late to eat dinner so here I am eating nonsense popcorn chips because I don’t want to eat dinner so late.
