No ability to go past 125 mph (actually rated at 124 mph), hence, why there on the speedo?

I would suppose they reuse the graphic on the m60.

Ha! I see what you're saying, why not 130mph if the car goes up to 124mph.

On the i4 M50 which has a top speed of 140mph the top speed on the speedometer is 160mph.

Speedos always show more than the actual capability, even the most basic of cars eg a 1 litre crap mobile will have a higher speedo max than is possible.

Psychology.

You don't want different variants of the same car to have different speedometer ranges, do you? That would create an inconsistent experience across the line. One speedo range to rule them all. That way it looks the same across the board. Makes the most UX sense.

Since ID7 instrument cluster is digital I've seen different top speeds depending on model, for example on the X6:
- non-M X6 models that have a top speed of 155Mph have the top speed on the speedometer of 160Mph
- X6M which can have a top speed of 177Mph has a top speed of 180Mph on the speedometer.

I don't particularly care that much about that detail 🙂. I didn't even notice this.

As is generally the case with every car I've ever driven....

You've not seen this in variants of older cars then with old school analogue dials?

I've seen countless examples across multiple brands where the scale differs across trim/engine levels.

Does the IX have the seat belt pre-tensioner that gives you a little "hug" when you first drive off?
